Sweet or savory. Breakfast’s primary dilemma. I often find myself drawn to a little treat in the morning. Golden carbohydrate crowned with fruit! Are you the breakfast king? But then I think. Fluffy egg resplendent with bacon saber! Art thou the breakfast majestic? And then I quit my job at Medieval Times and head to Albuquerque, NM. Because there, on a shaded, green leaf-lined patio, I can have it all. Welcome to Tia B’s La Waffleria. Their specialty, as I’m sure you can guess, is the humble waffle, made elegant in their deft irons. A sweet offering, like our favorite, Blue Lavender, avoids any dessert cloyingness thanks to the earthy flavor of their signature blue corn waffle. The same waffle - crunchy on the outside, soft in the middle, with just the right amount of corn grit - pairs just as well with an egg scramble and a lightly dressed arugula salad. Bring a friend who will let you eat a bite (Ok, just one more bite. Mmm. Let me just. Three bites, that’s it!!) off their plate so you can sample as many delicious waffle combinations as possible!

Price: One of their specialty waffles is just above the $10 mark, but well worth the price.

Health: It is a pile of bread with the occasional whipped cream. But it honestly never feels heavy.

Speed: The wait for breakfast is very reasonable. And you can sip coffee on their verdant patio while you wait.
